Crust

Combine:

1 cup flour.

1/4 cup sugar

1/2 tsp salt.

8 tbsp melted butter

Line square pan with aluminum which overlaps on all four sides to ease lifting from pan.

Blend into a smooth dough. With fingers, flatten into a square pan. Bake at 350 F for 19 - 24 minutes until slightly golden. Remove.

Filling

2/3 cup lemon juice.

2 tsp lemon zest

2 tsp cream of tartar.

1 cup sugar

3 eggs + 3 yolks separated

Combine in a saucepan. On low heat, stir constantly until thickened.

Add

4 tbsps butter

Stir until butter is melted.

Strain

Pour over crust and bake until slightly golden.

Allow to cool completely. Gently lift from tin and cut into squares.
